Is it still that big of an issue if i'm the only site that's pulling any decent traffic? I'm not too knowledgable on the web server end of things but could my host (who is a friend of mine with a server) pull some data of what resources are going where and the % that may be going to other sites? Dedicated server sounds great but money is an object. I'd need at least a gig of space and about 80-100gb of traffic per month... couple that with needing a pretty fast server and we're talking $$$$$. The site is non-profit so it would all be out of pocket, which isn't really doable. Thanks again for your reply and any future ones by anybody.
Anybody else out there running a nuke site that handles 200 people no problem? What are your server specs?
*edit* yeah, i've seen the plat docs. i had to tweak plat a bit to run faster on my server (for some reason the limit image mod was REALLY slowing topic loads down) but it seems to be running pretty damn fast now. it just seems to bog down with lots of traffic. Seems i usually end up with about 20 sql queries per page load (give or take a few depending on what page). I don't think that's a lot but am i wrong?

If you are getting 20 queries per page, it's great, avrg PHP-Nuke's defualt main page throws about 164 or so queries when not logged in as a user or admin. I have cut down few on my site, if you go there to 46 queries per page and still working on cutting down more.
There is this other distro I am working with few people when we have done a nice job cutting down queries.
As for you on being a shared server, sometimes it's not your site that is lagging, it someone else's crappy code or even 404s can crash a server, thats why I asked.
A common mistake most people make is define a 404 page in htaccess file and either forget to upload it or type the file name wrong with causes a huge loop and crashes the server.
