This may be a newbie questions, but have searched hi and low for the answer.

How can I get it so only the latest 5 news stories appear on the front page, and all older stories get archived?

In the preferences, set it to only 5 stories on the front page.

The rest will automatically be archived.

When I go there I see 5 stories on the front page.

You probably just need to edit YOUR account in the "your account" module. There is an option where the individual user can set how many news stories are on the front page, change that.
