Is it imperative, if I was running 7.4, to copy over the 7.8 files, when doing the version to version (7.4 to 7.5, 7.5 to 7.6, etc) upgrades?

hi, yes you need to run each of those upgrade scripts.

Quick upgrade tutorial

Note: Only use the quick upgrade[overwrite files] if you did not make alot of modifications to your site.
